You have the option of speaking with Priestess Nyrona prior to leaving Gonfalon Bay:

"I sense that you carry the cleansing water I gave to Parisse Plouff. Go with care, hero.
Any soulrazer knight is a fearsome foe, but the Sable Knight is one of the first and most powerful of its kind. I will pray for you."

What more can you tell me about the Sable Knight?

"According to legend, a necromancer conjured the armor to help her in battle. She died shortly after the spell was complete, leaving the Sable Knight unshackled and uncontrolled. Ever since, it's wandered the land, spreading dark magic."

Parisse Plouff said it threatened pilgrims?

"Yes. The Sable Knight does not speak. It is entirely possible that it does not even think. But it seems drawn to attack servants of the Divines and despoil their sacred places.
A remnant of the dark will of its creator, perhaps."

If you talk to her again before doing the task:

"Don't forget to cleanse the area when you destroy the Sable Knight. Otherwise the necromantic energy may seep back into its discarded armor and renew its curse."

If you return after completing the task but before turning in the quest:

"My prayers are answered! You return, safe and whole. And I sense that a great evil is no more.
Parisse Plouff will want to see you at once, hero."
