When spoken to she'll being unwilling to talk before the quest:

"I'm very sorry, I'm waiting for someone. Would you leave me to my thoughts, please? I don't want to miss him … I've been waiting for so long."

While in Rivenspire, you may have come across Klaandor Axe-Bearer, the person she is waiting for. You can fulfill his request and choose how you go about it.

"I'm very sorry, I'm waiting for someone. Would you leave me to my thoughts, please?
That's why I'm here, actually. You're waiting for Klaandor?
"Yes! Did Klaandor send you? Where is he? When will he be here? This is so exciting! He's been gone so long."
I'm sorry, but Klaandor is dead. I found this journal, and his amulet, on his body.
"What? No! He couldn't have …. What happened? How did he die?"
He had the vampiric blood-curse. He sought death rather than hurt you.
"By the Eight! A vampire? That … that mule! That ass! Do you have any idea how long I've been waiting for him? We had something wonderful together … and he goes and gets himself killed? As a vampire!"
I'm sorry?
"That's it, I've decided. Men are all mules. I'm going to march right over to the Dead Wolf, get ripping drunk. Maybe tomorrow I'll join the city guard. Bah!
Thanks for telling me, I guess. If you'll excuse me?"
Klaandor says it will be some time before he can return to Shornhelm. He sent this amulet. [Lie]
"An … an amulet? Thank you for this, I guess. It's lovely. But it's no substitute for Klaandor. Tell me, please. Where is he?"
I don't know. He said he'll be here as soon as he can.
""As soon as he can?" That's it! Do you have any idea how long I've been waiting for that … that mule? We had something wonderful together, no doubt about it. But this is it. It's over between us. Maybe I'll learn a new tradecraft …."
I'm sorry?
"No, no. You know what? Don't apologize. This is just what I needed to hear. I'll go straight away to talk to Lorbash at the smithy. This is a new chapter for me!
Thank you for setting me straight, stranger."

If you told her the truth and exit out of the conversation before turning in the quest, she will say:

"Damn him, Damn that stupid mule. To think I'll never see him again, to give him a swift kick in the rear."
I'm sorry? (Same quest completion dialogue)

If you lied to her and exit out of the conversation before turning in the quest, she will say:

"I'll be better off without him. Yes. Now that I know he's not coming back, I can move on with my life. Better off without that stupid mule!"
I'm sorry? (Same quest completion dialogue)

After completing the quest, her reply to you will depend on your choice:

Told her truth:
Told her a lie:
"Oh that mead is going to taste so good. Mead today, a blade tomorrow. That's my plan! Forget that stupid mule!"
"It's decided, then. I'm going to take up weaponsmithing. My father was always very handy with an anvil. Perhaps I'll try to earn an apprenticeship … sorry, please excuse me. I have a lot of planning to do!"
